Banana Cake with Coconut Chips
Mixture I:
4 - 5 ripe bananas
2 eggs
100 g organic coconut oil, liquid
2 tsp organic coconut blossom nectar
1 tbsp organic coconut vinegar
Mash bananas with a fork, then add all ingredients and mix well.
Mixture II:
60 g organic spelt flour
30 g coconut flour
50 g oat flakes
60 g coconut chips
60 g walnuts
2 tsp baking powder
1 tsp baking soda
a pinch of sea or pink salt
Mix all ingredients.
Topping:
1 ripe banana, quartered.
some coconut chips
Preparation:
Preheat the oven to 180°C and cover a 25 cm tin with baking paper. Combine the mixtures I & II. Empty the dough into the springform pan, then decorate banana pieces and coconut chips on top. Bake in the preheated oven on the middle shelf for 45 - 50 minutes.
